Whole30 Week 1 Recap

Well I’m already 1 week into my Whole30 and happy to say that it’s flying by! Haven’t seen huge changes in how I feel/look, but I wasn’t expecting drastic improvements anyhow since eating this way isn’t exactly a shock to my body. The only change I’ve really experienced is actually a slight decrease in energy, but I think that’s likely because I’m consuming fewer calories while staying extremely active. So a decrease in energy was bound to happen. Towards the end of the week I decided to increase my carb intake, but without increasing sugar intake, so I have chosen to include white rice on tough training days to replenish glycogen stores and keep my energy up. I also decided to include my Go Gnarly grassfed whey protein post workout to ensure proper muscle recovery. So I’m going to stick with those modifications because I know that my body is okay with them already, and actually kind of needs them to perform optimally.

Here are some examples of some of my meals from this week!

Lunches generally looked something like this. Protein, veg sometimes avocado.

Breakfasts have generally looked a lot like my lunches, or they’ve been this combination: chicken, sweet potato and almond butter (my absolute favorite!)

Dinners have usually been pretty simple as well, but interesting enough to keep me excited about coming home to cook, like this spiced turkey burger with creamy guac and fried plantains!

Plantains have been a crucial source of carbs for me during this Whole30. I’m not complainin’ though, who wouldn’t want to eat boat loads of these beauties??

I’ve been trying to stay away from dried fruits (aside from the occasional medjool date) to keep my sugar intake in check, which means no lara bars (not a huge fan anyways). but on my way back from Greenville I needed a snack to tide me over and was lucky enough to find this Whole30 compliant bar! It was delicious, personally I thought it was way better than lara bars
